• 1 ½ cups grated carrot, lightly packed
  • ½ cup chopped walnuts
  • 2 eggs
  • 1 cup castor sugar
  • ¾ cup oil
  • ½ teaspoon vanilla
  • 1 cup plain flour
  • 1 teaspoon bi-carb soda
  • ½ teaspoon mixed spice
  • ½ teaspoon salt

Combine eggs, sugar, oil, vanilla, carrot and sifted dry ingredients. Beat on low speed or with wooden spoon. Stir in walnuts. Mix well. Pour mixture into well greased 20cm ring tin. Bake in moderate oven 45-50 minutes. Leave to cool for five minutes before turning out. When cool, ice with cream cheese or butter icing.
