Mummy’s Lemon Butter
- 250g butter
- 250g sugar
- 4 eggs
- juice 4 lemons (medium)
Whisk eggs first and then mix all together in suitable jug. Stand in saucepan of water and bring to boil. Stir constantly for approx 20 minutes. Put a small amount on a plate in fridge for a few minutes to test if ready to bottle.
