• 400-500g grated zucchini (about 3 large)
  • 1 cup grated cheese
  • 150g diced bacon
  • 1/3 cup oil
  • 5 eggs
  • 1 chopped (finely) onion or onion flakes
  • 1 cup SR flour
  • Handful pinenuts (approx 25g)
  • 125g tin corn kernels (or frozen) – OPTIONAL

Grease lamington or 20cm square tin. Beat the eggs and then add the rest. Mix well. Bake in mod oven for approx 30-40 minutes until brown. Serve hot or cold.
