Zucchini & Pine Nut Slice
- 400-500g grated zucchini (about 3 large)
- 1 cup grated cheese
- 150g diced bacon
- 1/3 cup oil
- 5 eggs
- 1 chopped (finely) onion or onion flakes
- 1 cup SR flour
- Handful pinenuts (approx 25g)
- 125g tin corn kernels (or frozen) – OPTIONAL
Grease lamington or 20cm square tin. Beat the eggs and then add the rest. Mix well. Bake in mod oven for approx 30-40 minutes until brown. Serve hot or cold.
